Light Egg Salad Sandwich

Ingredients
- Any Food for Life bread. (8 slices)..serves four
- 6 hard boiled eggs, chopped
- Half package firm tofu (7 oz.)
- 4-5 Tbs. Hellmann's Low fat Mayo (may use sub 2 Tbs. plain Greek yogurt
- salt and pepper to taste
Directions
- Use egg slicer to chop boiled eggs and tofu
- Place chopped eggs and tofu in a bowl
- Add mayo or greek yogurt, then add salt and pepper
- Mix together well
- Spread on bread
