Light Egg Salad Sandwich

Ingredients 
  • Any Food for Life bread. (8 slices)..serves four
  • 6 hard boiled eggs, chopped
  • Half package firm tofu (7 oz.)
  • 4-5 Tbs. Hellmann's Low fat Mayo (may use sub 2 Tbs. plain Greek yogurt
  • salt and pepper to taste
Directions 
  1. Use egg slicer to chop boiled eggs and tofu
  2. Place chopped eggs and tofu in a bowl
  3. Add mayo or greek yogurt, then add salt and pepper
  4. Mix together well
  5. Spread on bread
