Heirloom Tomato Egg in a Hole

Ingredients
- 1 Slice of Ezekiel 4:9 ® Sprouted Whole Grain Bread
- Heirloom cherry tomatoes
- 1 Egg
- Coconut oil
- Avocado
- Gruyere Cheese
- Honey, Thyme, Balsamic Olive Oil
- Black Pepper
Directions
- Cut cherry tomatoes in half or in slices
- Heat pan and put coconut oil in the pan
- While pan is heating, cut a whole in the center of your bread
- Put bread in pan and toast on both sides until crispy on the edges
- Crack the egg and put it in the hole you made
- After a minute or two, flip your bread over to cook the other side of the egg in the bread for another minute (or you can just cook the one side and not flip the bread)
- Take out of pan and put on plate: top with smashed avocado, sliced tomatoes, grated Gruyere cheese, pepper, and drizzle with the honey/thyme/balsamic olive oil. (You can make your own or I found mine in a local store.)
