Lentil Walnut Tacos with Avocado Cilantro Cream
Ingredients
Food for Life Sprouted Corn Tortilla
For Taco "Meat":
1 cup cooked lentils
1 cup toasted walnuts
1 tbs olive oil
1/2 onion
1 1/2 tsp smoked paprika
1 tsp cumin
1 tbs tomato paste
For Avocado Cilantro Cream:
1 large avocado
1/4 cup cilantro
2 cloves garlic
1/3 cup vegan sour cream (we recommend Good Karma)
1 tsp lime juice
1 tsp olive oil
Other toppings:
Lettuce
Tomato
Avocado
Chopped onions
Cilantro (for garnish)
Directions
For Taco “Meat”
- Add cooked lentils and toasted walnuts into food processor
- pulse until mixture resembles ground beef
- Add olive oil to skillet
- Place onions in skillet and sauté
- Season onions with smoked paprika, cumin and tomato paste
- Add lentil/walnut mixture
- Stir with spatula until all ingredients are well-incorporated
- Cook for two minutes
For Avocado Cilantro Cream:
- Put all of the ingredients in the food processor
- Combine until smooth
Assemble and enjoy!
