Sheet Pan Vegetarian Fajitas

Ingredients 
  • Food For Life Sprouted Corn Tortillas
  • 1 cup of sliced Crimini or Baby Bella mushrooms
  • 1 cup Zucchini cut into coins, then cut in half
  • 1 Red bell pepper, sliced
  • 1 cup Red onion, sliced
  • 1-2 tbsps Olive oil
  • 1 bunch of Cilantro
  • To serve: Lime wedges, avocado, vegan sour cream, cilantro, vegetarian refried beans, and Spanish-style rice
Directions 
  1. Preheat oven to 400ºF.
  2. In a small bowl, combine all the spices along with the salt and pepper. Mix until well combined. Set fajita spice mix aside.
  3. Line a large baking sheet with aluminum foil. Place all veggies on a baking sheet.
  4. Drizzle with olive oil and sprinkle on the fajita spice mix. Lightly toss to combine.
  5. Bake in the oven for 20-30 minutes or until veggies are cooked through. Add the tortillas to the oven within the last 5 minutes of cooking to warm them through.
  6. Serve with lime wedges, avocado, vegan sour cream, cilantro vegetarian refried beans, and Spanish-style rice.
  7. Enjoy! This recipe serves four, two tacos each.
